the quality begins in our winery by owing the best wine production area. We are the owners of the classic "Cru" areas, where top wines have been made since ancient times and about which even French wine-growers have been raving.

A rigorous profit restriction to 55 - 60 hl/Hectare, (in 1995 only 44 hl/Hectare!), the introduction of the natural green manure and permanent stubble mulching in Tunisia, as well as the individual hand harvest of all separate lots at the optimum time guarantee of outstanding, healthy grapes. We always strive for a perfect organized harvest.We do not use herbicide and chemical fertilizer in principle. We reduce the pest control to the biologically indisputable amount.

Green manuring in the vineyards and in the olive groves of Domaine Atlas

We integrate green plants or wilted plant material into the ground. We even use raps, sunflowers and clover grass mixture for these purposes. Green manuring supports plants and vitalizes the soil and thus prevents ground erosion and washing out of nutrients into the groundwater. If legumes (for example peas) field beans, lupins are used as inter fruit plants, the soil is also enriched moreover with nitrogen.

Advantages of green manuring

- The plant cover provides shade to the ground, activates organisms in the ground, protects against evaporation and prevents erosion; unwanted wild herbs are suppressed.

The ground is enriched with organic substance, which is converted into a favorable form of humus by organisms in the ground

The roots loose and aerates deeper ground layers; therefore, the water and oxygen supply is enhanced. The roots absorb nutrients and prevent their erosion into the groundwater.
